Steps:

Prepare all the ingredients

Cook penne pasta

Dice the carrots

Dice the green bell peppers

Mince the garlic

Then mince red onion

Shred fresh corn ( canned corn is ok too)

Grate ginger

In a pre-heated pan, sauté onions and garlic

Add in the carrots and bell peppers

When the carrots has soften, add corn

To boost the flavor saute in the oregano, cumin, chili powder, turmeric and grated ginger

Pour in the tomato sauce. Let it simmer for a few minutes. Add ketchup

Mix in cooked penne pasta
