Delicious and Cute Cakesicles (Cake Popsicles)

One of the most delicious, cute, and easy dessert to make at home is cakesicles!

Cakesicles are a fun twist on a traditional cake pop. It is crafted using popsicle molds, very easy and cute! The other shell is made of melted chocolate which you can color depending on your preference, with a deliciously soft and fluffy cake inside. Perfect for every occasion indeed!

Method:

  1. Use any left-over cakes or use a cake box for this recipe, or you can follow the recipe below.
    1. Pre heat oven to 325 degrees Fahrenheit.
    2. Combine the hot water to the cocoa powder and stir until dissolved.
    3. Mix all the wet ingredients; the milk, vegetable oil, eggs and vanilla extract. Set aside.
    4. Combine the dry ingredients; all-purpose flour, baking powder, baking soda and sugar in a stand mixer. Add half of the milk mixture and mix for about 3-4 minutes until fluffy.
    5. Add the rest of the milk mixture to the cocoa mixture and stir. When fully combined, add it to the batter and mix just until incorporated.
    6. Bake for 20-30 minutes.
  2. Melt the chocolates and spread them in to the molds. When fully spread, insert the stick and put them in the freezer for 15 minutes.
  3. Crumb the cake and mix them with a buttercream frosting or any frosting you like. Mix them until they are no longer dry or cracks when pressed together. If it happens, add a little more of the buttercream. It should have a play dough consistency. 
  4. Pressed the cake dough in the mold making sure that every gap is filled but do not fill it to the brim. There should be enough space for the melted chocolate at the top. Chill for 5 minutes before unmolding.
  5. Decorate as desired.

Why are my Cakesicles cracking?

If the coating is too thin it will crack when unfolding the cakesicles (I’m speaking from experience 😉 ). Repeat with the remaining molds. Chill for 3 minutes.
