Steps:
Prepare all the ingredients
Before starting the dressing, let’s make the croutons. First, let’s slice the bread into small squares.
Place the bread in a bowl.
Season with salt and pepper then drizzle oil
Place inside the oven for a few minutes.
Squeeze some lemon juice.
Mince garlic.
In a bowl, add in anchovy, garlic, lemon juice, yogurt, and Worcestershire sauce. Slowly add olive oil. Whisk vigorously.
How to check when the dressing is emulsified: use a spoon, stir the sauce if the dressing remains visible at the back of the spoon, it indicates that it is good enough.
Rinse, drain the Romaine lettuce. Chop the lettuce into small pieces.
Remove croutons in the oven. Make sure it is golden brown and crispy.
Build the salad by sprinkling the dressing over the lettuce then add croutons. Toss it with your hands.
You can add more dressing if you desire but this is just optional.
Season it with fresh ground pepper and sprinkle with parmesan cheese.
