Ingredients

  • 120 g Spaghetti noodles
  • ½ c Pistachio (soaked overnight)
  • 1 c Roasted bell pepper sauce
  • ½ c Soy milk
  • 1 tbsp Garlic powder
  • Fresh herbs, Parsley

Instructions

  • Prepare all the ingredients
  • Cook spaghetti noodles. While the spaghetti is cooking, make sauce. Drain soaked pistachio. Wash with water.
  • In a blender, combine pistachio, red bell pepper sauce, soy milk and garlic powder. Blend them together.
  • In a saute pan, pour in the sauce to warm the sauce then add in cooked spaghetti. Mix until all the spaghetti is coated with sauce.
  • Add in fresh parsley. (basil or thyme is good too!)
  • Serve. Enjoy your delicious and healthy vegetarian pasta sauce!
