Prepare all the ingredients
Before making the dressing, let's make the croutons first. Slice the bread into small squares
Place the bread in a bowl
Season it with salt and pepper then drizzle oil.
Place it inside the oven for a few minutes
After that, squeeze some lemon juice
Mince garlic
For the dressing: In another bowl, add in anchovy, garlic, lemon juice, yogurt, and Worcestershire sauce. Slowly add olive oil and then whisk vigorously
To check when the dressing is emulsified, use a spoon and stir the sauce. If the dressing remains visible at the back of the spoon, it indicates that the dressing is good
Rinse and drain romaine lettuce then chop it into small pieces
Remove croutons in the oven. Make sure it is golden brown and crispy
Build the salad by sprinkling the dressing over the lettuce then add croutons. Toss it with your hands
Optional: add more dressing if desired
Season it with fresh ground pepper and sprinkle with parmesan cheese.
