  • 1 cup Penne pasta
  • ½ cup Corn, shredded
  • ½ cup Carrots, diced
  • ½ cup Bell pepper, diced
  • 1 small Red onion, minced
  • 2 cloves Garlic, minced
  • 1 ½ cup Canned diced tomatoes
  • 3 tbsp. Ketchup
  • 1 tbsp. Oregano
  • 1 tbsp. Cumin
  • 1 tbsp. Turmeric
  • 1 tbsp. Chili powder
  • 1 tbsp. Ginger, grated


  • Prepare all the ingredients
  • In a boiling water, cook penne pasta
  • Dice the carrots and green bellpeppers. Mince the garlic and red onion. Shred fresh corn (canned corn is great too), lastly, grate ginger
  • In a pre-heated pan, sauté onions and garlic then add in the carrots and bell peppers
  • When the carrots has soften, add corn
  • To boost the flavor saute in the oregano, cumin, chili powder, turmeric and grated ginger
  • Pour in the tomato sauce. Let it simmer for a few minutes. Add ketchup then mix in cooked penne pasta
  • Serve. Enjoy your delicious meal!
