Prepare all the ingredients
In a boiling water, cook penne pasta
Dice the carrots and green bellpeppers. Mince the garlic and red onion. Shred fresh corn (canned corn is great too), lastly, grate ginger
In a pre-heated pan, sauté onions and garlic then add in the carrots and bell peppers
When the carrots has soften, add corn
To boost the flavor saute in the oregano, cumin, chili powder, turmeric and grated ginger
Pour in the tomato sauce. Let it simmer for a few minutes. Add ketchup then mix in cooked penne pasta
Serve. Enjoy your delicious meal!
