Ingredients

  • 2 chicken breast
  • 4 tbps breadcrumbs
  • 1 egg
  • Thyme
  • Basil
  • 1 small white onion, minced
  • 4 cloves garlic
  • 4-6 tomatoes
  • 4 tbps tomato paste
  • 1 c chicken stock
  • 1/2c cream
  • ΒΌ c white wine
  • 100 g spinach

Instructions

  • Prepare all the ingredients
  • Prepare to fry the chicken. Season the breadcrumbs with basil,thyme and parmesan cheese.
  • Coat the chicken by dipping into the egg, then breadcrumbs. In a non stick pan, heat with oil. Fry the chicken.
  • Fry until golden brown.
  • Flip the chicken and cook further.
  • Remove the chicken from the pan. Set aside.
  • In the same pan, add in the onion, garlic and tomatoes.
  • Sprinkle in basil and thyme. Place in tomato paste. Pour in chicken stock.
  • Add in the white wine. Pour in the cream then the spinach. Cook until spinach is wilted.
  • Bring back the chicken into the pan.
  • Leave in the chicken for a few minutes until chicken gets tender.
