Prepare all the ingredients
Prepare to fry the chicken. Season the breadcrumbs with basil,thyme and parmesan cheese.
Coat the chicken by dipping into the egg, then breadcrumbs. In a non stick pan, heat with oil. Fry the chicken.
Fry until golden brown.
Flip the chicken and cook further.
Remove the chicken from the pan. Set aside.
In the same pan, add in the onion, garlic and tomatoes.
Sprinkle in basil and thyme. Place in tomato paste. Pour in chicken stock.
Add in the white wine. Pour in the cream then the spinach. Cook until spinach is wilted.
Bring back the chicken into the pan.
Leave in the chicken for a few minutes until chicken gets tender.
