Ingredients

  • 300 g Vermicelli noodles (sweet potato)
  • 100 g Mushrooms
  • 250 g Chinese cabbage or spinach
  • 1 small Carrot
  • 1 big Bell pepper
  • Sesame oil
  • Salt and Pepper

For the sauce:

  • 1 1/2 c Water
  • 7 tbsp Soy sauce
  • 4 tbsp Brown sugar
  • 3 tbsp Sesame seed
  • 3 tbsp Sesame oil

Instructions

  • Prepare all the vegetables
  • Slice the mushrooms
  • Blanch the noodles, once cooked, remove the noodles from the boiling water.
  • Saute the cabbage with sesame oil. Season with salt and pepper. Set aside.
  • Do the same with the carrots, after that, the mushrooms
  • Saute the bellpeppers
  • Toast the sesame seeds for enhance flavor
  • Prepare the sauce. Place all together: water, soy sauce, sugar, sesame oil, sesame seeds
  • Toss in noodles, let it stay until the noodles absorb all the sauce
  • Add in all the vegetables
  • Serve and enjoy your delicious and nutritious vegan japchae!
