- 1 pound potatoes, diced
- 1 clove garlic, minced
- 1 tbsp olive oil
- 2 tsp lemon juice
- 1 tsp oregano
- ½ cup crumbled feta cheese
- 1. Preheat oven to 450 degrees F.
- 2. On a baking sheet, toss potatoes with olive oil, garlic, lemon juice, oregano, salt and pepper until well combined.
- 3. Roast in oven for 50-60 minutes, until potatoes are browned. Remove from oven, top with crumbled feta cheese, and serve.
