Roasted feta potatoes

Ingredients

  • 1 pound potatoes, diced
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 2 tsp lemon juice
  • 1 tsp oregano
  • ½ cup crumbled feta cheese

Instructions

  1. 1. Preheat oven to 450 degrees F.
  2. 2. On a baking sheet, toss potatoes with olive oil, garlic, lemon juice, oregano, salt and pepper until well combined.
  3. 3. Roast in oven for 50-60 minutes, until potatoes are browned. Remove from oven, top with crumbled feta cheese, and serve.
